Ingredients
1 pound penne pasta
2 large chicken breasts, thinly sliced
1 tablespoon Cajun seasoning
3 tablespoons butter
4 cloves garlic, minced
2 cups heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook penne pasta until al dente, then drain and set aside.
2. Season sliced chicken with Cajun seasoning. Melt butter in a skillet over medium heat, add chicken, and cook until golden and cooked through. Remove and set aside.
3. In the same skillet, sauté minced garlic until fragrant. Add heavy cream and simmer for 3–4 minutes.
4. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper.
5. Add cooked penne to the sauce, toss to coat. Stir in mozzarella and let it melt.
6. Return chicken to the skillet and combine gently with the pasta and sauce.
7. Serve hot with extra Parmesan or Cajun seasoning if desired.
Notes
Use freshly grated Parmesan for the best melt and flavor.
Add a splash of cream or milk when reheating leftovers to keep the sauce smooth.
