Description

This cheesy Rotel ranch queso is the ultimate party dip—creamy, spicy, and loaded with flavor. Made with Velveeta, Rotel tomatoes, ranch seasoning, and cream cheese, this easy queso recipe is perfect for game day or any gathering. Serve it with chips or spooned over nachos for a bold Tex-Mex snack!

Ingredients

450g Velveeta cheese

1 can (284g) Rotel tomatoes with green chilies

115g cream cheese

1 tablespoon dry ranch seasoning mix

60ml milk

1/2 teaspoon garlic powder

Instructions

1. Cube the Velveeta and cream cheese to ensure quick and even melting.

2. In a medium saucepan over medium-low heat, add Velveeta, cream cheese, and the full can of Rotel (including juices).

3. Stir gently as everything melts together.

4. Once mostly melted, add the dry ranch seasoning, garlic powder, and milk. Stir continuously.

5. Continue stirring until the mixture is smooth and creamy.

6. Transfer the queso to a serving bowl or slow cooker to keep warm.

7. Serve hot with tortilla chips or use as a topping for nachos or tacos.

Notes

Always melt the cheese slowly to avoid clumping.

You can swap Velveeta for cheddar and Monterey Jack for more flavor.

For extra heat, mix in pepper jack or diced jalapeños.
