Description

This Cheesy Rotini with Garlic Parmesan Chicken recipe is a creamy, family-friendly pasta dinner packed with juicy chicken, garlic, parmesan, and cheddar. Perfect for busy weeknights or indulgent comfort meals. Easy, cheesy, and full of flavor. Ideal for pasta lovers looking for a quick and delicious chicken dinner.

Ingredients

225g rotini pasta

2 boneless skinless chicken breasts

3 garlic cloves, minced

60g grated parmesan cheese

120g shredded cheddar cheese

1 cup heavy cream

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon Italian seasoning

Instructions

1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente. Drain and set aside.

2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Cook 4–5 minutes per side until fully cooked. Remove and let rest before slicing.

3. In the same skillet, melt butter and add minced garlic. Sauté for 30 seconds until fragrant.

4. Pour in heavy cream and stir until slightly thickened.

5. Add cheddar and parmesan, stirring until melted and the sauce is smooth.

6. Toss in the cooked rotini and sliced chicken. Stir until everything is well combined and heated through.

7. Serve hot, garnished with extra parmesan or parsley if desired.

Notes

This dish is best enjoyed fresh but reheats well with a splash of cream.

Use freshly grated cheese for the smoothest, creamiest sauce.

Add sautéed mushrooms or spinach for extra flavor and nutrients.
