Description

Ingredients

1 pound ground beef

1 small onion, chopped

2 cloves garlic, minced

2 tablespoons taco seasoning

1 can (10 oz) diced tomatoes with green chilies

1 cup uncooked white rice

2 cups beef broth

1 ½ cups shredded cheddar cheese

2 tablespoons chopped cilantro (optional)


Instructions

1. Heat a large skillet over medium heat. Add the ground beef and chopped onion. Cook until beef is browned and onion is soft, about 6-8 minutes. Drain excess grease.

2. Stir in minced garlic and taco seasoning. Cook for 1 minute until fragrant.

3. Add diced tomatoes with green chilies, uncooked rice, and beef broth. Stir and bring to a light simmer.

4. Cover and reduce heat to low. Simmer for 18-20 minutes or until rice is tender and liquid is absorbed.

5. Remove lid and sprinkle shredded cheddar cheese over top. Cover for 2 minutes until cheese melts.

6. Garnish with chopped cilantro if desired and serve hot straight from the skillet.

Notes

Use lean ground beef to avoid excess grease.

Do not use instant rice as it will become mushy.

Add beans or corn to stretch the recipe further.
