Description

These Cheesy Zucchini Breadsticks are the ultimate low-carb, gluten-free appetizer or snack. Packed with shredded zucchini, mozzarella cheese, and garlic seasoning, this easy recipe is perfect for dipping or serving with soups and salads. A cheesy, healthy twist on traditional breadsticks.


Ingredients

2 cups shredded zucchini

2 large eggs

1 1/2 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Grate the zucchini using the coarse side of a box grater and squeeze out as much liquid as possible using a clean kitchen towel.

2. In a large bowl, mix the zucchini, eggs, 1 cup of mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper until well combined.

3. Preheat oven to 425°F and line a baking sheet with parchment paper. Spread the zucchini mixture into a rectangle about 1/2 inch thick.

4. Bake for 20 minutes or until the top is golden and edges are firm.

5. Remove from oven, sprinkle remaining 1/2 cup mozzarella evenly over the top.

6. Return to oven for 5–7 more minutes until cheese is melted and bubbly.

7. Let cool slightly, slice into sticks, and serve warm with marinara or ranch.

Notes

Squeeze out as much moisture as possible from the zucchini to avoid soggy breadsticks.

Feel free to experiment with different cheeses like cheddar or provolone.

These are best enjoyed fresh but can be crisped up again in a toaster oven.
