Description

These chewy apple cinnamon breakfast bars are the perfect make-ahead breakfast packed with wholesome oats, cinnamon, and real apple. Great for busy mornings, these healthy breakfast bars are gluten-free, naturally sweetened, and freezer-friendly.

Ingredients

1 cup old-fashioned oats

1 cup almond flour

1 ½ teaspoons ground cinnamon

¼ teaspoon salt

⅓ cup maple syrup

½ cup unsweetened applesauce

1 medium apple, peeled and finely chopped (or ½ cup dried apple, chopped)

1 large egg

1 teaspoon vanilla extract

3 tablespoons melted coconut oil

Instructions

1. Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper. Lightly grease the paper.

2. In a large bowl, mix the oats, almond flour, cinnamon, and salt.

3. In a separate bowl, whisk together maple syrup, applesauce, egg, vanilla, and melted coconut oil until smooth.

4. Combine the wet ingredients with the dry mix and stir until evenly blended.

5. Fold in the chopped apple, mixing to distribute evenly.

6. Pour the batter into the prepared pan and spread it evenly with a spatula.

7. Bake for 28–32 minutes, until the edges are golden and the center is set.

8. Cool in the pan for 10 minutes, then lift out and transfer to a rack. Let cool completely before slicing.

Notes

Use fresh apples for a moist, soft texture or dried apples for a chewier bite.

These bars freeze beautifully—slice and wrap individually for a ready-made snack.

If your apples are extra juicy, pat them dry before adding to the mix.
