2 tablespoons all-purpose flour (for soup)
2 tablespoons butter
1 cup all-purpose flour (for dumplings)
1 ½ teaspoons baking powder
½ teaspoon salt
2 tablespoons melted butter
½ cup milk
Instructions
1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes. Stir in minced garlic and cook 1 minute more.
2. Pour in chicken broth. Add bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer 10 minutes.
3. Add the shredded chicken and simmer another 5 minutes to blend flavors.
4. In a bowl, mix 1 cup flour, baking powder, salt, melted butter, and milk until just combined to make the dumpling dough.
5. Drop small spoonfuls of dough into the simmering soup. Cover and steam dumplings for 15 minutes until fluffy and cooked through.
6. Remove the bay leaf, adjust seasoning if needed, and serve hot.
