Description

Ingredients

1 lb ground chicken

3 cloves garlic, minced

1 small onion, grated

2 tablespoons fresh parsley, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 cup Greek yogurt

1 tablespoon lemon juice

1 clove garlic, grated

Pinch of salt (for yogurt)


Instructions

1. In a large bowl, mix ground chicken, grated onion, minced garlic, parsley, cumin, coriander, salt, and pepper until just combined.

2. Form the mixture into 12 small ovals or meatballs.

3. Heat olive oil in a skillet over medium heat. Cook koftas in batches until golden and cooked through, about 8–10 minutes.

4. In a bowl, combine Greek yogurt, grated garlic, lemon juice, and salt. Let sit 5 minutes.

5. Spoon yogurt onto serving plates, top with koftas, and garnish with parsley or olive oil. Serve warm.

Notes

Let the garlic sit in the yogurt for a few minutes to mellow the sharpness.

Don’t overmix the chicken mixture or the koftas will be tough.

Serve everything immediately for best texture and flavor.
