Description

Chicken Scampi with Creamy Garlic Parmesan Rice is a rich, flavorful one-pan dinner featuring juicy seared chicken over buttery garlic rice with parmesan and cream. Perfect for weeknight meals or special occasions, this easy scampi dish is packed with flavor and comfort.


Ingredients

1 lb chicken tenders

1 cup long grain white rice

4 cloves fresh garlic, minced

3 tablespoons butter

1 tablespoon olive oil

½ cup grated parmesan cheese

2½ cups chicken broth

½ cup heavy cream

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped parsley


Instructions

1. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Season chicken tenders with salt and pepper.

2. Cook the chicken until golden brown and cooked through. Remove from skillet and set aside.

3. Lower the heat slightly and add another tablespoon of butter. Add minced garlic and sauté until fragrant, about 30 seconds.

4. Stir in rice and toast it for 1–2 minutes, coating with garlic butter.

5. Pour in chicken broth. Stir and bring to a simmer. Cover and cook until rice is tender and liquid is mostly absorbed, about 15 minutes.

6. Stir in heavy cream and grated parmesan cheese. Let simmer until thickened and creamy.

7. Return the chicken to the pan, nestling it into the rice. Let everything warm through for 2–3 minutes.

8. Garnish with chopped parsley and serve immediately.

Notes

This dish is best served fresh and hot.

Use freshly grated parmesan for best results.

Add more cream or broth when reheating leftovers to restore texture.
