Ingredients

1 lb chicken tenders

1 tbsp olive oil

3 tbsp butter

4 cloves garlic, minced

2 cups chicken broth

1 cup white rice

1/2 cup grated Parmesan cheese

1 tbsp lemon juice

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp chopped fresh parsley (optional)


Instructions

1. Season the chicken tenders with salt, pepper, and Italian seasoning.

2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.

3. Sear the chicken on both sides until golden and cooked through. Remove and set aside.

4. Lower the heat and add remaining butter to the skillet.

5. Stir in minced garlic and sauté until fragrant but not browned.

6. Add white rice to the garlic butter and stir to coat evenly.

7. Pour in chicken broth and bring to a gentle simmer.

8. Cover the skillet and cook on low for 18 minutes or until the rice is tender.

9. Stir in Parmesan cheese and lemon juice into the cooked rice.

10. Return the chicken to the skillet and spoon rice over the top.

11. Cover and let heat through for a few more minutes.

12. Garnish with chopped parsley if desired and serve warm.

Notes

Use boneless, skinless chicken tenders or thin-sliced breasts for best results.

Fresh garlic makes a big difference—don’t substitute with powder here.

To reheat, add a splash of broth to loosen up the rice and keep it creamy.
