Description

This Chili Chicken Bowl with Coconut Lime Drizzle is a flavorful and healthy dinner recipe made with chili-spiced chicken, creamy coconut lime drizzle, and served over rice or quinoa. It’s perfect for meal prep, gluten-free diets, and weeknight meals with a tropical twist.


Ingredients

1 lb chicken thighs or breasts

1 ½ tsp chili powder

1 tsp garlic powder

1 tsp paprika

1 tbsp olive oil

½ tsp salt

⅓ cup coconut milk

2 tbsp fresh lime juice

1 tsp honey

2 cups cooked rice or quinoa

¼ cup fresh cilantro, chopped

1 avocado, sliced (optional)


Instructions

1. Combine chicken with chili powder, garlic powder, paprika, olive oil, and salt. Marinate for at least 15 minutes or up to 1 hour.

2. Heat a skillet over medium-high and cook chicken for 5–7 minutes per side until fully cooked and charred. Set aside to rest.

3. In a small bowl, whisk coconut milk, lime juice, and honey to make the drizzle. Adjust to taste.

4. Assemble bowls with rice or quinoa, sliced chicken, avocado, and drizzle the coconut lime sauce on top.

5. Garnish with chopped cilantro and serve warm or chilled.

Notes

This bowl is fantastic for meal prep and keeps well in the fridge.

You can swap quinoa with brown rice or couscous for variety.

Use chicken thighs for juicier texture, or breasts for a leaner bowl.
