Ingredients

2 cups chocolate graham cracker crumbs

6 tablespoons unsalted butter, melted

24 ounces cream cheese, softened

1 cup granulated sugar

3 large eggs

1 cup sour cream

1 teaspoon vanilla extract

8 ounces semi-sweet chocolate, melted

1 can (21 ounces) cherry pie filling


Instructions

1. Preheat oven to 325°F. Prepare a 9-inch springform pan by lining the bottom with parchment paper.

2. Combine chocolate graham cracker crumbs and melted butter. Press into the bottom of the pan. Bake for 10 minutes. Let cool.

3. Lower oven temperature to 300°F. In a mixing bowl, beat cream cheese until smooth. Add sugar and mix until well combined.

4. Add eggs one at a time, mixing after each. Add sour cream and vanilla, and blend until smooth.

5. Fold in melted semi-sweet chocolate until the mixture is fully incorporated.

6. Pour filling over the cooled crust. Place pan in a water bath and bake for 55 to 65 minutes, or until edges are set but center slightly jiggles.

7. Turn off oven, crack door, and let cheesecake cool inside for 1 hour.

8. Chill in refrigerator for at least 4 hours or overnight.

9. Before serving, spoon cherry pie filling over the top. Slice and enjoy.
