Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups finely grated zucchini
1 cup semi-sweet chocolate chips
Instructions
1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
3. In a large bowl, whisk together the egg, granulated sugar, brown sugar, oil, and vanilla extract until smooth.
4. Stir in the grated zucchini until combined.
5. Add the dry mixture to the wet ingredients and stir until just combined.
6. Fold in the chocolate chips evenly.
7. Pour the batter into the prepared pan and smooth the top.
8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool for 15 minutes in the pan, then transfer to a wire rack. Slice and serve.
Notes
These bars become even more moist and flavorful after a day.
Squeeze zucchini gently after grating to avoid excess moisture.
