Ingredients
1 can (14 ounces) sweetened condensed milk
3 cups shredded sweetened coconut
2 cups powdered sugar
24 maraschino cherries, well drained and patted dry
2 cups chocolate (dark, semi-sweet, or milk), chopped or chips
1 tablespoon coconut oil or shortening (optional)
Instructions
1. In a large bowl, mix together sweetened condensed milk, shredded coconut, and powdered sugar until a sticky dough forms.
2. Drain and pat the maraschino cherries completely dry with paper towels to remove excess moisture.
3. Take a tablespoon of the coconut mixture, flatten it, and wrap it around each cherry. Roll into a smooth ball and set on a lined tray.
4. Freeze the truffles for 30 minutes to firm them up.
5. Melt the chocolate in a microwave-safe bowl or over a double boiler. Stir in coconut oil or shortening if using, for smoother dipping.
6. Dip each chilled truffle into melted chocolate and let excess drip off. Place on parchment-lined tray.
7. Let truffles set at room temperature or refrigerate until chocolate hardens.
8. Store in an airtight container in the fridge for up to 2 weeks.
