Ingredients
1 1/2 cups heavy whipping cream
6 oz bittersweet chocolate, chopped
3 large egg yolks
1/4 cup granulated sugar
1/2 teaspoon peppermint extract
Pinch of salt
2 tablespoons crushed candy canes (optional, for garnish)
Whipped cream (for topping, optional)
Instructions
1. Chop the bittersweet chocolate and melt it in a heatproof bowl over simmering water. Stir until smooth, then let it cool slightly.
2. In another bowl, whisk together egg yolks, sugar, and salt over simmering water until pale and slightly thickened.
3. Slowly whisk the melted chocolate into the egg yolk mixture. Stir in the peppermint extract and let cool to room temperature.
4. Whip the heavy cream until soft peaks form.
5. Gently fold the whipped cream into the chocolate mixture in batches until fully combined.
6. Spoon into glasses or ramekins and chill for at least 2 hours.
7. Before serving, top with whipped cream and crushed candy canes if desired.
