Ingredients
1 cup shredded zucchini
1/2 cup cocoa powder
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1/3 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Instructions
1. Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper or grease lightly.
2. Shred zucchini finely. No need to peel. Lightly blot excess moisture with paper towel.
3. In a large bowl, whisk egg, vegetable oil, vanilla, granulated sugar, and brown sugar until smooth.
4. Add cocoa powder, flour, baking soda, and salt to the wet ingredients. Stir to form a thick batter.
5. Fold in zucchini and chocolate chips until evenly combined.
6. Pour batter into prepared pan and smooth the top.
7. Bake 30–35 minutes, until a toothpick comes out with moist crumbs.
8. Let cool 15 minutes in the pan, then transfer to a wire rack to cool completely. Slice and serve.
Notes
This recipe makes 9 thick brownies or 12 smaller ones.
Don’t overbake or the brownies may lose their fudgy texture.
Use finely grated zucchini for best integration into the batter.
