Ingredients
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground nutmeg
¼ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar
2 large egg yolks
¼ cup eggnog
1 teaspoon vanilla extract
Instructions
1. Cream the butter and sugar together in a large mixing bowl until light and fluffy.
2. Add the egg yolks one at a time, mixing well after each. Stir in eggnog and vanilla extract until smooth.
3. In a separate bowl, whisk together the flour, baking powder, nutmeg, and salt.
4. Gradually add the dry mixture to the wet mixture, mixing just until a soft dough forms.
5. Scoop tablespoon-sized dough portions onto a lined baking sheet, spacing them evenly.
6. Bake at 350°F (175°C) for 10–12 minutes, or until edges are lightly golden.
7. Let cookies cool completely before glazing with an eggnog glaze and sprinkling with nutmeg.
Notes
Cookies will continue to bake slightly after being removed from the oven.
Use full-fat eggnog for the best flavor and texture.
Add a splash of rum extract to the glaze for extra holiday cheer.
