Ingredients
6 cups romaine lettuce, chopped
1 large Honeycrisp apple, thinly sliced
1 cup pomegranate seeds
1 cup candied pecans
1⁄2 cup goat cheese or feta, crumbled
1⁄4 small red onion, thinly sliced
2 tablespoons maple syrup
1 tablespoon Dijon mustard
2 tablespoons apple cider vinegar
1⁄3 cup olive oil
1⁄4 teaspoon salt
1⁄4 teaspoon black pepper
Instructions
1. In a small jar or bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, salt, and pepper. Slowly add olive oil while whisking until emulsified. Set aside.
2. Rinse and dry romaine lettuce, chop into bite-sized pieces, and place in a large salad bowl.
3. Add sliced apples, pomegranate seeds, thinly sliced red onion, crumbled cheese, and pecans over the lettuce.
4. Drizzle prepared maple vinaigrette over salad just before serving.
5. Toss gently to combine and coat everything in the dressing. Serve immediately.
Notes
Use Honeycrisp or Fuji apples for best crunch and sweetness.
Make the dressing ahead and store in the fridge for up to 3 days.
Don’t add dressing until just before serving to keep salad crisp.
