Ingredients
4 oz cream cheese
3 tbsp powdered sugar
1 cup unsalted butter, softened
1 cup granulated sugar
1/3 cup brown sugar
1 large egg
2 tsp vanilla extract
2 3/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup granulated sugar (for coating)
2 tsp ground cinnamon (for coating)
Instructions
1. Beat cream cheese and powdered sugar until smooth. Scoop into small portions and freeze on a lined tray.
2. In a bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
3. Add egg and vanilla extract to the mixture and blend well.
4. Stir in flour, baking soda, and salt until fully combined into a soft dough.
5. Scoop out dough, flatten it, place a frozen cheesecake center in the middle, and wrap the dough around it.
6. Roll cookie dough balls in the cinnamon sugar mixture.
7. Place on a parchment-lined baking sheet and bake at 350°F for 10-12 minutes until golden on the edges.
8. Let cookies cool slightly before serving or storing.
