Ingredients
40 saltine crackers
1 cup unsalted butter
1 cup brown sugar
1/3 cup granulated sugar
1 tablespoon ground cinnamon
1 teaspoon vanilla extract
1 pinch salt
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment or foil. Lay saltine crackers in a single layer to cover the entire surface.
2. In a saucepan over medium heat, melt butter and stir in brown sugar. Let it bubble gently for 3 minutes, stirring constantly until thickened.
3. Pour the caramel mixture evenly over the crackers and spread it with a spatula to cover all crackers.
4. Bake for 7 to 8 minutes until the toffee is bubbling and absorbed.
5. While still hot, mix granulated sugar and cinnamon in a small bowl, then sprinkle over the hot toffee. Press down lightly so it sticks.
6. Let the toffee cool completely. Once hardened, break into pieces and store or serve.
