Ingredients
2 1/4 cups all-purpose flour
1 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon salt

3/4 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups peeled and finely diced apple
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, rolled oats, baking soda, salt, and cinnamon.
3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.
4. Add the egg and vanilla extract, then mix until smooth and fully combined.

6. Fold in the finely diced apple until evenly distributed throughout the dough.

Notes
These cookies are best made with firm apples like Honeycrisp, Fuji, or Gala because they hold their shape well while baking.
Dice the apples into very small pieces so they blend evenly into the dough and do not create soggy spots.
