Ingredients

1 ½ cups almond flour

2 tablespoons coconut flour

1 ½ teaspoons baking powder

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

4 large eggs

½ cup keto eggnog

⅓ cup melted butter

½ cup granulated sweetener (erythritol or monk fruit)

1 teaspoon vanilla extract


Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

2. In a large bowl, whisk together almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt.

3. In a separate bowl, beat the eggs, then add the keto eggnog, melted butter, sweetener, and vanilla extract. Mix until smooth.

4. Pour the wet ingredients into the dry mixture. Stir until combined, but avoid overmixing.

5. Transfer the batter to the prepared pan and smooth the top.

6. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
