Ingredients
1 and 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1 tablespoon orange zest
1/2 cup fresh orange juice
1 teaspoon vanilla extract
1 large egg
1/2 cup milk
1/3 cup melted butter
1 cup cranberries (fresh or frozen)
Instructions
1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly.
2. In a large bowl, whisk together flour, baking powder, and salt.
3. In a separate bowl, mix sugar, orange zest, orange juice, vanilla extract, egg, milk, and melted butter until smooth.
4. Gradually combine the wet ingredients with the dry ingredients. Mix until just combined without overmixing.
5. Toss cranberries with a bit of flour and fold them gently into the batter.
6. Divide the batter evenly into the muffin tin.
7. Bake for 20–25 minutes or until golden and a toothpick comes out clean.
8. Let cool slightly before serving or transferring to a wire rack.
Notes
Use fresh orange juice and zest for the brightest flavor.
Frozen cranberries don’t need to be thawed, just coat in flour before adding.
Don’t overmix the batter to keep muffins light and fluffy.
