Ingredients
2 cups shredded rotisserie chicken
1 can refrigerated biscuit dough
6 cups chicken broth
1 can cream of chicken soup (10.5 oz)
2 tablespoons butter
1 cup diced yellow onion
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon poultry seasoning
2 tablespoons chopped fresh parsley (optional)
Instructions
1. In a large pot or Dutch oven, melt butter over medium heat. Add diced onion, carrots, and celery. Cook until softened, about 5–7 minutes.
2. Stir in minced garlic and cook for 30 seconds until fragrant.
3. Pour in chicken broth and cream of chicken soup. Stir to combine and bring to a simmer.
4. Add poultry seasoning, salt, and black pepper to the pot.
5. Stir in shredded rotisserie chicken and simmer for 10 minutes to blend flavors.
6. Cut biscuit dough into quarters or bite-size pieces. Drop into the simmering mixture gently.
7. Lightly press the biscuit pieces into the liquid. Cover and simmer on low for 15–20 minutes or until biscuits are cooked through.
8. Stir gently before serving and garnish with fresh parsley if desired.
Notes
This dish thickens as it cools, so add a splash of broth or milk when reheating leftovers.
For a richer flavor, use homemade chicken broth or bone broth.
Use original-style biscuits, not flaky ones, to keep dumplings intact and tender.
