Ingredients
2 cups cooked shredded chicken
2 cups fresh spinach or 1 cup frozen spinach drained
1 can cream of chicken soup
1/2 cup sour cream
1 1/2 cups shredded cheddar and mozzarella cheese
1 small onion diced
2 cloves garlic minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup breadcrumbs optional
1 tablespoon olive oil
Instructions
1. Preheat oven to 375°F and grease a 9×13 baking dish.
2. Heat olive oil in a skillet and sauté diced onion until soft. Add garlic and cook briefly.
3. In a large bowl, combine chicken, spinach, cream of chicken soup, sour cream, sautéed onion and garlic, half of the cheese, salt, and pepper.
4. Transfer mixture into baking dish and spread evenly.
5. Sprinkle remaining cheese on top and add breadcrumbs if desired.
6. Bake for 25 to 30 minutes until bubbly and golden.
7. Let rest for 5 minutes before serving.
Notes
Make sure to drain spinach well to avoid excess moisture.
Rotisserie chicken works perfectly and saves time.
You can swap sour cream with Greek yogurt for a lighter option.
