Ingredients
24 chocolate sandwich cookies, finely crushed
5 tablespoons unsalted butter, melted
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 ounces semisweet chocolate, melted and cooled
2 teaspoons vanilla extract
4 large eggs
1 1/4 cups heavy whipping cream
3 tablespoons powdered sugar
2 tablespoons chocolate shavings
Instructions
1. Mix the crushed chocolate sandwich cookies with 5 tablespoons melted butter until evenly combined. Press the mixture into the bottom and up the sides of a 9 inch pie dish. Chill the crust for 20 minutes.
2. In a large mixing bowl, beat 1 cup softened butter with the granulated sugar until pale and fluffy.
3. Add the melted and cooled semisweet chocolate and vanilla extract. Beat until smooth and glossy.
4. Add the eggs one at a time, beating for 3 minutes after each addition so the filling becomes light and silky.
5. Spoon the filling into the chilled crust and smooth the top. Refrigerate for at least 4 hours, or until set.
6. Beat the heavy whipping cream with the powdered sugar until soft peaks form. Spread or pipe it over the chilled pie.
7. Finish with chocolate shavings, slice, and serve cold.
Notes
For the smoothest filling, make sure the butter is fully softened before mixing.
Let the melted chocolate cool slightly so it blends smoothly into the filling without melting the butter.
