Ingredients
1 lb Italian sausage
4 cups chicken broth
3 cups Yukon gold potatoes sliced
2 cups kale chopped
1 cup heavy cream
1 medium onion diced
3 cloves garlic minced
1 tsp salt
1/2 tsp black pepper
Instructions
1. Cook sausage in a large pot until browned and crumbled
2. Add onion and cook until soft then add garlic
3. Pour in chicken broth and add potatoes then simmer until tender
4. Add kale and cook until wilted
5. Stir in heavy cream and heat gently
6. Season with salt and pepper and serve
Notes
Use spicy sausage for extra heat
Avoid boiling after adding cream
Spinach can replace kale if preferred
