Description

These Coconut Almond Truffles are an easy no-bake dessert made with sweetened shredded coconut, roasted almonds, and creamy condensed milk. Ingredients

1 ½ cups sweetened shredded coconut

⅔ cup sweetened condensed milk

20 roasted whole almonds

½ teaspoon vanilla extract

Pinch salt

¼ cup extra shredded coconut for coating


Instructions

1. In a bowl, combine shredded coconut, condensed milk, vanilla extract, and a pinch of salt. Mix until sticky and cohesive.

2. Chill the mixture in the refrigerator for 20–30 minutes to firm up.

3. Scoop out 1 tablespoon of mixture, press a roasted almond in the center, and shape into a ball.

4. Roll each truffle in the extra shredded coconut to coat.

5. Place on a lined tray and refrigerate for at least 1 hour to set.

6. Serve slightly chilled and enjoy!

Notes

These truffles can be made ahead and stored for days.

Unsweetened coconut can be used, but add more condensed milk as needed.

For extra indulgence, dip them in melted dark chocolate before chilling.
