Description
These Coconut Snowball Cheesecake Bites are a no-bake dessert made with cream cheese, sweetened coconut, and white chocolate. A perfect make-ahead treat for holidays, parties, or sweet cravings, these bites are creamy, chewy, and coated in tropical flavor.
Ingredients
8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup graham cracker crumbs
3 tablespoons butter, melted
1 ½ cups white chocolate chips
2 cups sweetened shredded coconut
Instructions
1. In a large mixing bowl, beat the cream cheese until smooth.
2. Add powdered sugar and vanilla extract, and mix until light and fluffy.
3. Stir in graham cracker crumbs and melted butter until fully combined.
4. Scoop and roll the mixture into bite-sized balls.
5. Place them on a parchment-lined tray and freeze for 30 minutes.
6. In a microwave-safe bowl, melt white chocolate chips in 20-second intervals, stirring in between until smooth.
7. Dip each chilled ball into the melted chocolate.
8. Immediately roll each one in sweetened shredded coconut.
9. Place back on the tray and refrigerate until set.
Notes
Store in an airtight container in the fridge for up to 5 days.
Freeze up to 3 months and thaw in the fridge before serving.
Use a small cookie scoop for evenly sized bites.
