Ingredients
1 cup all-purpose flour
1 cup unsalted butter, melted
2 cups brown sugar, divided
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1 1/2 cups sweetened shredded coconut
1 cup toffee bits
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F and line a 9×13-inch baking dish with parchment paper.
2. In a mixing bowl, combine 1 cup flour, 1 cup melted butter, and 1 cup brown sugar. Mix until crumbly and press evenly into the prepared pan to form the crust.
3. In another bowl, whisk together the eggs, remaining 1 cup brown sugar, vanilla, baking powder, and salt until smooth.
4. Fold in the shredded coconut and toffee bits until well distributed.
5. Pour the topping mixture over the crust and spread evenly.
6. Bake for 25 to 30 minutes until the top is golden and the center is set.
7. Cool completely before slicing into bars and serving.
Notes
These bars can be stored in the fridge for up to a week.
To freeze, layer bars between parchment in an airtight container for up to 2 months.
To toast the coconut for more flavor, bake at 325°F for 5–7 minutes before adding to the batter.
