Ingredients
400g linguine
2 boneless skinless chicken breasts
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon paprika
½ teaspoon red pepper flakes
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the linguine according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
2. Season the chicken breasts with salt, pepper, and paprika. In a large skillet over medium heat, add a drizzle of oil and cook the chicken for 5–7 minutes per side until golden and cooked through. Remove and slice into strips.
3. In the same skillet, melt the butter over medium heat. Add garlic, paprika, red pepper flakes, and salt. Stir and cook for 1–2 minutes until fragrant.
4. Stir in lemon juice and chopped parsley, then turn off the heat.
5. Add the cooked linguine to the skillet with the sauce. Toss to coat. Add reserved pasta water gradually to loosen the sauce as needed.
6. Return the chicken to the skillet and toss everything together until evenly coated and warmed through.
7. Serve hot, garnished with extra parsley or grated parmesan if desired.
Notes
Use chicken thighs instead of breasts for extra flavor.
Leftover grilled or rotisserie chicken works well and saves time.
Adjust the red pepper flakes for your preferred spice level.
