Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
¾ cup unsalted butter, softened
½ cup granulated sugar (plus extra for rolling)
¼ cup brown sugar
2 egg yolks
¼ cup eggnog
½ teaspoon rum extract
1 teaspoon vanilla extract
Instructions
1. In a medium bowl, whisk together flour, baking powder, salt, and nutmeg.
2. In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
3. Beat in egg yolks one at a time, then add eggnog, rum extract, and vanilla extract. Mix until smooth.
4. Gradually stir the dry ingredients into the wet ingredients until combined.
5. Cover and refrigerate the dough for at least 1 hour.
6. Preheat oven to 350°F. Line baking sheets with parchment paper.
7. Scoop tablespoon-sized balls of dough, roll in sugar, and place on the baking sheet.
8. Bake for 10–12 minutes, or until edges are set and tops are crackled.
9. Let cool 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
Notes
This dough freezes well—scoop into balls and freeze on a tray before transferring to a bag.
If using homemade eggnog, ensure it’s thick and traditional in texture.
