Ingredients
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup hot cocoa mix
1/2 cup melted chocolate (semi-sweet or dark)
1 teaspoon vanilla extract
1 cup marshmallow fluff or mini marshmallows
Instructions
1. Preheat oven to 325°F and line a 9×9-inch baking pan with parchment paper.
2. Combine graham cracker crumbs and melted butter until it resembles wet sand. Press into pan and bake for 10 minutes.
3. In a mixing bowl, beat softened cream cheese until smooth. Add sugar, eggs, hot cocoa mix, melted chocolate, and vanilla extract. Mix until fully combined.
4. Pour cheesecake mixture over crust and smooth the top.
5. Bake for 30–35 minutes, or until center is set. Let cool completely at room temperature, then refrigerate for 3 hours or overnight.
6. Spread marshmallow fluff over chilled bars or top with mini marshmallows. Broil for 1–2 minutes until golden.
7. Slice into bars with a warm knife and serve.
Notes
These bars taste best chilled but can also be enjoyed at room temperature.
You can freeze them before adding the marshmallow layer.
Use a kitchen torch for a more even marshmallow toasting.
