Ingredients
1 lb salmon (fresh, cooked, or canned)
3 medium Yukon gold or russet potatoes, diced
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
3 cloves garlic, minced
2 tbsp butter
2 tbsp all-purpose flour
4 cups fish stock or chicken broth
1 cup heavy cream
1 tsp dried dill or 1 tbsp fresh dill
1 tsp salt (or to taste)
0.5 tsp black pepper (or to taste)
Instructions
1. Melt butter in a large pot over medium heat. Add onions, carrots, and celery. Cook for 5-7 minutes until softened.
2. Stir in garlic and cook for another minute until fragrant.
3. Sprinkle in flour, stir to coat veggies, and cook for 1-2 minutes to remove the raw flour taste.
4. Slowly add the broth while stirring constantly. Add diced potatoes. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes until potatoes are fork-tender.
5. Stir in the salmon. If raw, simmer for about 5 minutes until cooked. Flake gently as it cooks.
6. Lower heat and add the cream. Stir until heated through. Season with salt, pepper, and dill. Taste and adjust seasoning.
Notes
Use canned salmon for a quick version—just drain well and remove bones.
For extra richness, substitute part of the broth with whole milk.
Fresh dill gives the best flavor but dried works well in a pinch.
