Ingredients
2 large chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
4 garlic cloves, minced
2 cups heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
12 oz penne or fettuccine pasta
Salt and pepper, to taste
Instructions
1. Season sliced chicken breasts generously with Cajun seasoning.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken until browned and cooked through. Remove and set aside.
3. Bring salted water to a boil and cook pasta until al dente. Reserve some pasta water and drain.
4. In the same skillet, sauté garlic until fragrant. Pour in heavy cream and simmer gently.
5. Add Parmesan and mozzarella, stirring until smooth and melted.
6. Return chicken to the skillet and toss in the cooked pasta. Add pasta water if needed to loosen the sauce.
7. Season with salt and pepper to taste.
8. Serve hot with extra Parmesan or chopped parsley.
