Ingredients

12 oz rotini pasta

1 lb boneless, skinless chicken breasts

2 tbsp Cajun seasoning

1 tbsp olive oil

2 tbsp butter

4 garlic cloves, minced

1 cup heavy cream

1 cup chicken broth

1 1/2 cups mozzarella cheese, shredded

1/3 cup Parmesan cheese, grated

1/2 tsp salt

1/2 tsp black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Drain and set aside.

2. Cut the chicken into bite-sized pieces and toss with Cajun seasoning.

3. Heat olive oil in a large skillet over medium-high heat. Sear the seasoned chicken until golden and fully cooked. Remove and set aside.

4. In the same skillet, melt butter and sauté minced garlic until fragrant.

5. Add heavy cream and chicken broth, stir, and bring to a gentle simmer.

6. Reduce heat and stir in shredded mozzarella and grated Parmesan until melted and smooth. Season with salt and pepper.

7. Add cooked rotini and chicken back into the skillet. Toss everything to coat.

8. Simmer for 2–3 minutes to let the flavors meld. Serve hot.

Use freshly shredded mozzarella for a smoother sauce.
