Ingredients
2 cups rotini pasta
2 boneless skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
3 garlic cloves, minced
2 tablespoons butter
1 ½ cups heavy cream
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts generously with Cajun seasoning, salt, and pepper.
2. In a skillet over medium-high heat, heat olive oil and sear chicken for 5–7 minutes per side until cooked through. Set aside to rest.
3. Boil rotini pasta in salted water according to package instructions until al dente. Drain and set aside.
4. In the same skillet, lower heat to medium and melt butter. Add minced garlic and sauté until fragrant.
5. Pour in heavy cream and simmer gently for 3–5 minutes, stirring frequently.
6. Add shredded mozzarella and Parmesan cheese, stirring until melted into a smooth sauce.
7. Slice cooked chicken and return it to the skillet.
8. Add the cooked rotini and toss everything to coat evenly in the sauce.
9. Garnish with chopped parsley and serve hot.
Notes
Use rotisserie chicken for a shortcut version.
Add a pinch of red pepper flakes for extra heat.
