Ingredients
1 lb rigatoni pasta
1 lb ground beef
4 cloves garlic, minced
4 tbsp unsalted butter
1 cup heavy cream
4 oz cream cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
2 tbsp chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Drain and set aside, reserving 1 cup of pasta water.
2. In a large skillet, brown the ground beef over medium heat. Season with salt and pepper. Remove and drain excess grease.
3. In the same skillet, melt butter and sauté minced garlic until fragrant.
4. Lower the heat and whisk in cream cheese and heavy cream until smooth. Stir in Parmesan and mozzarella until melted.
5. Return beef to skillet. Add cooked rigatoni and splash of reserved pasta water as needed. Toss to coat pasta evenly in sauce.
6. Garnish with fresh parsley and red pepper flakes if desired. Serve hot.

Let pasta rest a few minutes before serving to thicken.
