Description

Creamy Chicken and Orzo Soup is a cozy, one-pot comfort food perfect for weeknight dinners. Made with tender chicken, orzo pasta, fresh veggies, and a velvety cream broth, this easy soup recipe is satisfying, flavorful, and family-friendly.


Ingredients

2 tablespoons olive oil

2 tablespoons butter

1 medium yellow onion, diced

2 carrots, peeled and sliced

2 celery stalks, sliced

3 garlic cloves, minced

1.5 pounds boneless, skinless chicken thighs

6 cups chicken broth

1 cup orzo pasta

1 cup heavy cream

1 teaspoon fresh thyme leaves

1 teaspoon salt

½ teaspoon black pepper

2 cups fresh spinach (optional)


Instructions

1. Heat olive oil and butter in a large pot over medium heat.

2. Add diced onion, carrots, and celery. Cook until softened, about 5 minutes.

3. Stir in minced garlic and cook for 1 minute.

4. Add chicken thighs, sear both sides until lightly browned.

5. Pour in chicken broth, add thyme, salt, and pepper. Bring to a simmer.

6. Simmer for 15 minutes or until chicken is cooked through.

7. Remove chicken, shred it using two forks, then return to the pot.

8. Stir in orzo pasta and cook until tender, about 8–10 minutes.

9. Reduce heat, stir in heavy cream and spinach if using. Let spinach wilt.

10. Taste and adjust seasoning as needed. Serve hot.

Notes

Use rotisserie chicken for a quick shortcut.

Orzo will continue to absorb liquid, so add broth when reheating.

Swap spinach with kale for a heartier green.
