Ingredients
2 large chicken breasts
12 oz pasta (fettuccine, penne, or linguine)
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1 ½ cups heavy cream
1 cup freshly grated parmesan cheese
Salt, to taste
Black pepper, to taste
2 tablespoons chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water and drain the rest.
2. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear chicken until golden and cooked through. Remove and slice.
3. In the same skillet, melt butter and sautée minced garlic until fragrant, about 1 minute.
4. Pour in heavy cream, bring to a gentle simmer, then stir in parmesan. Whisk until the sauce thickens.
5. Add cooked pasta into the sauce and toss. If the sauce is too thick, loosen with pasta water.
6. Return chicken slices to the skillet and combine everything together.
7. Garnish with parsley and extra parmesan if desired. Serve hot.
Notes
Use chicken thighs if you want a juicier, more flavorful meat.
Freshly grated parmesan melts better than pre-shredded.
If storing, add a splash of cream when reheating to keep the sauce smooth.
