Ingredients
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 ribs celery, chopped
2 medium carrots, chopped
3 cups cooked shredded chicken
2 cans white beans, drained and rinsed
4 cups chicken broth
4 ounces cream cheese
1 cup milk
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, celery, and carrots. Sauté for 5–7 minutes until softened.
2. Stir in the cooked chicken and white beans. Let everything heat through.
3. Pour in the chicken broth and bring to a simmer. Cook for 10–15 minutes to allow flavors to combine.
4. Reduce heat to low. Stir in cream cheese until fully melted. Add milk and stir until smooth. Simmer for another 5–10 minutes.
5. Season with thyme, salt, and pepper. Serve hot.
