This creamy coconut white fish stew recipe is an easy, nourishing one-pot meal made with white fish simmered in a rich, tropical coconut milk broth. Ingredients

1 lb white fish fillets

1 can coconut milk (13.5 oz)

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

2 tablespoons lime juice

1 tablespoon fish sauce

1 medium onion, chopped

1 tablespoon olive oil

2 cups vegetable or fish broth

2 cups spinach leaves

1 teaspoon red chili flakes (optional)

Salt to taste

Black pepper to taste


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, and ginger. Cook until fragrant, about 5 minutes.

2. Add coconut milk, broth, fish sauce, lime juice, salt, and pepper. Bring to a gentle simmer.

3. Cut white fish into chunks and add to the pot. Simmer gently on low heat for 8 to 10 minutes until the fish flakes.

4. Stir in spinach and red chili flakes (if using). Let the spinach wilt for 2 minutes.

5. Taste and adjust seasoning. Serve hot with rice or crusty bread. Garnish with lime wedges or herbs if desired.

Notes

This stew gets better as it sits—leftovers are even more flavorful.

You can substitute spinach with kale or chard if preferred.

For extra richness, stir in a splash of heavy cream or coconut cream at the end.
