Ingredients
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) cream-style corn
1 cup sour cream
0.5 cup unsalted butter, melted
1 box (8.5 oz) cornbread mix
2 large eggs (optional)
1 cup shredded cheddar cheese (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
2. In a large mixing bowl, combine whole kernel corn, cream-style corn, sour cream, melted butter, and cornbread mix.
3. If using, add eggs and shredded cheddar cheese. Mix well until fully incorporated.
4. Pour the mixture into the prepared baking dish and spread it out evenly.
5. Bake uncovered for 45 to 55 minutes, or until golden brown on top and set in the center.
6. Let the casserole rest for 5 to 10 minutes before serving.
Notes
Use fresh or frozen corn if preferred, just make sure it’s cooked or thawed and drained.
Add diced jalapeños or green chiles for a spicy twist.
