Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
3 garlic cloves, minced
1 medium onion, diced
1 โ2 cup sun-dried tomatoes, chopped
1 teaspoon Italian seasoning
โ1โ4 teaspoon red pepper flakes (optional)
4 cups chicken broth
1 cup full-fat coconut milk
2 tablespoons nutritional yeast
2 cups fresh spinach
Salt and pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 5 minutes until softened.
2. Stir in garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for another 2 minutes.
3. Add the chicken breasts and chicken broth to the pot. Bring to a simmer, cover, and cook for 15 to 20 minutes until chicken is cooked through.
4. Remove the chicken and shred it with two forks. Return shredded chicken to the pot.
5. Stir in coconut milk and nutritional yeast. Simmer for 5 to 10 minutes to let flavors meld.
6. Add fresh spinach and stir until wilted. Season with salt and pepper to taste.
Notes
This soup gets creamier as it sitsโleftovers are even better.
You can use chicken thighs instead of breasts for more flavor.
If youโre not strictly dairy-free, a little parmesan on top is delicious.
