Ingredients
2 large yellow onions
2 tablespoons butter
2 cloves garlic, minced
1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
1 cup beef broth
1 cup heavy cream
18 ounces cheese tortellini (fresh or refrigerated)
1 cup shredded Gruyère or Swiss cheese
Salt and black pepper to taste
Instructions
1. Melt butter in a large skillet over medium-low heat. Add sliced yellow onions and a pinch of salt. Cook for 25 to 30 minutes, stirring occasionally, until onions are golden and caramelized.
2. Stir in minced garlic and thyme, cooking for 1 minute. Pour in beef broth and simmer for 5 minutes to deglaze and deepen the flavor.
3. Add heavy cream, bring to a gentle simmer, and let thicken for 3 to 5 minutes.
4. Add cheese tortellini, stir to coat, cover and cook for 3 to 4 minutes until pasta is tender and heated through.
5. Sprinkle Gruyère cheese over the top, stir gently until melted. Season with salt and black pepper. Serve hot.

Let the onions cook low and slow to develop deep caramel flavor.
Add a splash of broth when reheating leftovers to loosen the sauce.
