Ingredients

2 chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

4 garlic cloves, minced

1 cup heavy cream

3/4 cup grated parmesan cheese

1/2 cup shredded mozzarella cheese

8 ounces spaghetti

1 tablespoon chopped parsley (optional)


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.

3. Lower heat to medium and add butter. Stir in minced garlic and cook until fragrant.

4. Pour in heavy cream. Let simmer for a few minutes, then add parmesan cheese and stir until smooth.

5. In a separate pot, cook spaghetti according to package instructions. Reserve 1 cup pasta water, then drain.

6. Add cooked spaghetti to the sauce. Stir in mozzarella and a splash of pasta water to help the sauce coat the noodles.

7. Return chicken to the skillet and let simmer for 1-2 more minutes.

8. Garnish with parsley if desired and serve hot.

Notes

This dish is best served fresh but reheats well with a splash of milk.

You can substitute chicken thighs for a juicier option.

For extra flavor, add a pinch of red pepper flakes to the garlic butter.
