Description

These Creamy Marry Me Chicken Meatballs are juicy, homemade ground chicken meatballs simmered in a rich parmesan cream sauce with garlic and sun-dried tomatoes. A one-skillet meal perfect for dinner, date nights, or meal prep. This easy and creamy chicken meatball recipe is low-carb friendly, freezer-friendly, and absolutely irresistible.


Ingredients

1 lb ground chicken

½ cup breadcrumbs

¼ cup grated parmesan cheese

2 cloves garlic, minced

1 large egg

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

2 tbsp butter

1 cup chicken broth

1 cup heavy cream

½ cup sun-dried tomatoes, chopped

½ tsp red pepper flakes

1 tsp Italian seasoning

2 tbsp fresh basil, chopped

Extra parmesan for garnish


Instructions

1. In a bowl, combine ground chicken, breadcrumbs, parmesan, garlic, egg, salt, and pepper. Mix just until combined and form into meatballs.

2. Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides and transfer them to a plate.

3. In the same skillet, melt butter and add garlic. Cook until fragrant.

4. Stir in chicken broth, heavy cream, sun-dried tomatoes, red pepper flakes, and Italian seasoning. Simmer until slightly thickened.

5. Return the meatballs to the skillet and spoon sauce over them. Simmer for 10-12 minutes or until meatballs are cooked through.

6. Sprinkle fresh basil and more parmesan on top. Serve warm.

Notes

Let the sauce simmer gently to avoid curdling the cream.

Use freshly grated parmesan for the best melt and flavor.

Store leftovers with a splash of broth or cream to keep the sauce smooth.
