Ingredients

340g rotini pasta

450g ground beef

1 ½ tablespoons Cajun seasoning

200g Velveeta cheese, cubed

1 cup shredded mozzarella cheese

1 cup heavy cream

3 cloves garlic, minced

1 small onion, diced

2 tablespoons butter

Salt and pepper, to taste

1 tablespoon olive oil


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Drain and set aside, saving a little pasta water.

2. In a skillet, heat olive oil over medium heat. Add ground beef, break it up, and cook until browned. Add Cajun seasoning and cook fully through. Remove beef and set aside.

3. In the same skillet, melt butter. Add onion and garlic, sauté until soft and fragrant.

4. Pour in the heavy cream and bring to a low simmer. Add Velveeta cubes and stir until smooth. Season with salt and pepper. Stir in mozzarella until melted.

5. Add cooked rotini and Cajun beef to the sauce. Toss everything together, adding a splash of pasta water if needed to loosen the sauce.

6. Serve hot with optional parsley or Parmesan on top.

Notes

Let the dish rest a few minutes before serving to thicken.

Add extra cream if reheating to restore creaminess.
