Ingredients

2 chicken breasts

1 cup mushrooms, sliced

4 garlic cloves, minced

1 ½ cups heavy cream

1 cup grated parmesan cheese

3 tablespoons butter

Salt and black pepper to taste

12 oz pasta (fettuccine or penne)

1 ½ pounds baby potatoes, halved

2 tablespoons olive oil

2 tablespoons hot honey

½ teaspoon chili flakes (optional)

2 tablespoons fresh parsley, chopped


Instructions

1. Preheat oven to 425°F. Toss halved baby potatoes with olive oil, salt, pepper, and chili flakes. Roast for 30-35 minutes until crispy. Drizzle hot honey over warm potatoes and toss to coat.

2. Season chicken with salt and pepper. In a skillet over medium-high heat, melt butter and sear chicken until golden and cooked through, 5-6 minutes per side. Remove and rest.

3. In the same skillet, add more butter if needed and sauté mushrooms until golden. Add minced garlic and cook for 1 minute.

4. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan, salt, and pepper. Let simmer until slightly thickened, about 5 minutes.

5. Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.

6. Slice rested chicken. Add chicken and cooked pasta to the Alfredo sauce. Toss well, using pasta water if needed to loosen the sauce.

7. Serve hot, topped with fresh parsley and hot honey roasted potatoes on the side.

Notes

Use baby bella mushrooms for a richer flavor.

Add pasta water gradually to maintain a creamy texture.

Hot honey can be adjusted for less or more spice.
