Ingredients
1 pound fettuccine
1 pound beef sirloin or flank steak, thinly sliced
3 cloves garlic, minced
3 tablespoons unsalted butter
1 cup heavy cream
1 cup grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper, sear until browned and cooked through. Set aside.
2. In the same skillet, reduce heat and melt the butter. Stir in the garlic and cook for 30 seconds until fragrant.
3. Pour in the heavy cream, stir, and bring to a low simmer. Whisk in the Parmesan cheese gradually until the sauce is smooth and thickened.
4. Boil fettuccine in salted water until al dente. Reserve some pasta water, then drain.
5. Add the beef back to the skillet with the sauce. Toss in the cooked fettuccine. Loosen the sauce with reserved pasta water if needed.
6. Garnish with chopped parsley and additional Parmesan. Serve hot and enjoy!
Notes
Use fresh Parmesan for better melting and flavor.
Don’t overcook the beef—it should stay juicy and tender.
Reserve some pasta water to adjust sauce consistency as needed.
